Quick fix :

1. Edit the Course in WP Admin

2. Locate the field "Total number of Students in Course" in Course Settings metabox.

3. Change the value

The total number of students value is never matched in realtime, the value is simply incremented when a user joins the course and is decremented when a user leaves a course.
